Sting conducts clandestine bar spot checks of bartenders and servers working in licensed liquor establishments. We conduct a series of integrity tests to determine employee theft or misappropriation of revenue or other misconduct.
Noticing alcohol counts are off? Trying to figure out why your profits are not as they should be? Sting can help! These audits can either test monthly or bi-monthly, on any given employee, or target in on a suspected employee. Along with the ID Test and a good variety of customer service questions, our evaluators will complete a Drink Count – recording every drink seen leaving the bar for at least one hour. We then request the register tape for that time period and do an audit to make sure everything was rung in properly.
The Drink Count Narrative that comes with this report covers the entire visit. These narratives are extremely revealing. Along with taking note of the good things your staff do on the clock (which is so important), Sting evaluators will also note any negatives, for example: servers spending time on the phone, staff doing rounds of shots, a table in the corner noted hasn’t been helped in 20 minutes… if you really want to know what goes on after the boss goes home, this is the shop you want.
